Ingredients for 4 servings
4 fennel bulbs
2 tablespoons sugar
1 teaspoon of fennel seeds
100 g fresh goat cheese
1 yellow lemon
Cut some of the base of the fennel, remove the hard leaves, slice the bulbs. Keep the seeds. Cook the fennel in a frying pan with 1 bottom of water. When it becomes tender, add sugar, fennel seeds and 2 tablespoons of olive oil. Cook on high heat for 2 minutes until a nice coloring is obtained. Add salt and pepper.
Arrange the fennel in the bottom of a plate of pretty bill. Garnish with a quenelle of fresh goat cheese. Pour in a drizzle of olive oil. Place the fennel on the cheese and finish with a few lemon zest.
Serve lukewarm or warm. Drag a good black bread.
