CARPACCIO CUCUMBER, TOMATOES, LIGHT SAUCE WITH OLIVES

1 cucumber (s)
5 tomato (s) - Torino (elongated)
50 grams of pitted black olives
1 teaspoon of balsamic vinegar
1 garlic clove (s)
1 teaspoon Savora Mustard (with condiments)
1 tablespoon minced chili basil
Mixing interval control
Wash and dry the tomatoes and the cucumber stalk.
Insert the Multifunction Bowl equipped with the thin (3 mm) thin slicing disc on the intermediate output of the robot.
Set the speed to 2 and then slice the cucumber into slices.
Remove the stalks from the tomatoes and reserve the other into slices.
Arrange cucumber and tomato slices alternately in four small plates.
Peel the reserved tomato and place it in the blender bowl with the vinegar, mustard, garlic and basil
Mix at speed 2-3 until the mixture is well emulsified.
Pour this sauce on the carpaccio of cucumber and tomato (or serve in sauce).
