1 boneless skinless chicken breast
2 cups roughly chopped spinach
1/2 cup sliced mushrooms
1 cup largely diced mixed peppers
1/2 cup cherry tomatoes
1/4 cup grated mozarella(optional)
Cut pocket into chicken breast and stuff with half the mushrooms, tomatoes and peppers. You can add mozarella(optional). Season chicken with chicken spice and pepper. Secure with kebab sticks/toothpicks.
Heat oil in a frying pan and sear chicken on medium heat for 5 minutes on each side.
Transfer to oven pan, freshly squeeze lemon juice on the chicken and grill for 15 minutes at 180° along with remaining peppers, mushrooms and tomatoes.
Steam spinach and season with pepper. Once chicken is done, serve with the grilled vegetables and spinach
