"A specialty made from Rouergue prunes in the South of France. It is a delicious salty cake combining prunes, spinach and ham. An ideal dish to prepare on Sunday evening. "


For 6 persons

4 eggs
100 gr of flour
2 dl of milk
2 tablespoons olive oil
20 thin slices of country ham
500 gr of spinach
200 gr of prunes
Salt and pepper
Parsley, Coriander and Chervil

In a bowl, mix flour, salt, pepper and eggs, add milk and oil gradually.

Clean and chop herbs and spinach and mix in the mixture. Adjust seasoning if necessary.

Drain the prunes.

Line the bottom and sides of the mold with the slices of ham.

Bake in medium oven (thermostat 6) 30 minutes.
Ideas, tips & tricks

There are many local variations of the recipe. You can also offer it as an accompaniment to a roast poultry.
